We use Google Analytics to know which pages are read. Nothing is loaded until you decide: if you do not accept, not a single request goes to Google. There is no advertising and no other third-party cookie.
They keep the session in the administration area and remember the language and the section you choose. Without them the site does not work, and that is why they cannot be turned off.
